The vineyard lies in the hamlet of Ca’ Anfora, in the heart of the Aquileia DOC zone, where the soil has a sandy-clayey structure, often mixed or alternating – deep down – with more substantial deposits of gravel. |
Production Process |
The grapes were picked by hand and then, after very careful selection, they underwent delicate crushing followed by soft pressing. The must was then cleaned by a process of natural cold sedimentation. After the addition of selected yeasts, fermentation was carried out at a controlled temperature of around 20°C. (68°F.), in order to preserve all the wine’s characteristics of fragrance and fruitiness. Maturation – in stainless steel tanks – lasted 7 months and was carried out on the lees. |
